Chili “Chicken”- Day 10

Don’t panic people, I didn’t eat meat. On my mom’s side of the family there is a recipe and we all make our own little version.  We call it Chili Chicken. I’m not sure why, but it’s the only name I can use comfortably. I am the first to tackle the vegan edition. I was skeptical of subbing out tofu in a family favorite, but eating foods so new and different has made me really want familiar tastes. So…I made our old family favorite with tofu!!! I should take this moment to let you know, until ten days ago I…

Insanity- Day 4

Cardio Recovery For a workout with the word ‘recovery’ in the title I still found myself quite challenged. I tried to work on my form and stay with the workout, but I found myself needing to rest a few times. I’m always amazed at how difficult deep stretching can be.  My 3 year old, Noah started out pretty early in the work out with me this morning. As a mom who wants to teach her children to do her best, I found myself pushing a little more because he was watching. His form was terrible, but the fact he came…

Juicing- Day 9

60 Vegan Experiment Juicing is such a healthy way to get a large quantity of fruit and vegetables. I already loved juicing. We have an old Jack Lalanne Juicer that works wonderfully. Over the last few years we have experimented with juice. My favorite is a mix of carrot, spinach and apple. This batch of juice was especially yummy: 1 bag of spinach from Costco (huge bag) 1 bag of unpeeled carrots from Costco. (we cut off the end, but not necessary) 1 bag of small apples from any grocery store. (we used red.) The kids helped make the juice…

Insanity-Day 3

Cardio Power and Resistance I was SO sore yesterday! Thankfully we had an opportunity to swim for a few minutes and stretch out in a hot tub yesterday afternoon. So even though I was terribly sore this morning too, I know it was a fraction of what I would have been without the water play yesterday. The kids were up with us this morning when we started the workout so there was a little more distraction to overcome. Since we set up our workout area in the garage we just gave the kids a bucket of water and some paintbrushes…

Starbucks- Day 8

My husband and I had the rare privilege of going on a date night with another couple. This is rare because between the two families there are 7 children, so we don’t often have uninterrupted conversations. As excited as I was for our double date, our sitter came early and we had an opportunity to go have coffee before we met up with our friends. When we arrived at Starbucks, still toting our 2 month old, it hit me, not only can I not do caffeine because I’m nursing, but we gave up milk!! What do people do?!?! Ok…

Insanity- Day 2

Insanity-Day 2 Plyometric Cardio Circuit Wow! That was INTENSE! This is my favorite type of workout. It’s meant for an athlete. All the drills reminded me of “Hell Week” in high school sports. If you ever played sports in high school you might remember suicides and high knees. So does Shawn T. the trainer in the video Shawn T. rivaled in 41 minutes (including warm up and cool down) what most high school coaches made their athletes do in a week. OK, I’m sure I’m exaggerating a bit, but it really felt  bad an hour ago in the middle of…

Pecan Butter and Humus- Day 7

Every once in a while, maybe more often than I’d like to admit, someone responds to a question I ask and I feel nothing short of stupid for not already knowing the answer. Well, Hello nut butters!!! Today I made pecan butter. I couldn’t tell you which I take more pleasure in, how easy it was to make or how fresh, natural and good it tasted. Perhaps the combination of those coupled with the fact I learned something new, makes this discovery so exciting to me. If you own a food processor you must go by your favorite nut…

Insanity Day 1- Fit Test

I’M GOING TO LOVE THESE WORKOUTS!!! I’M SO EXCITED!!! There will be no boredom or getting used to these. At some point I will probably want to quit or die or throw up but hey that is a sign of a great workout right!!?!?!  Ha! Sitting down at the computer I realize its 7:15am and I’ve just finished my first real workout in months. My little Shiloh is 2 months old and since she has been born the only real exercise I have done is walking…pushing a triple jogger up hills…but walking nonetheless. My husband set up the garage as…

No Hot Dogs for Me- Day 6

This morning was a group outreach with our church at a local beach. I geared up all 4 kids, showed up 45 minutes late, was handed a trash bag and sent on my way, lovingly of course. So with 2 month old Shiloh strapped to my chest I pried my 19 month old away from a bucket of sand and coaxed my older boys (4 and 3) to run down the beach looking for trash. It was a blast! This is my serious, not sarcastic voice. I love picking up trash. Littering has always really bothered me and it…
