Milk- 60 Days Vegan- Day 23

Honestly I had no idea there were so many non-dairy options for milk. I’ve never had any adverse reactions to dairy, so it never really occurred to me to research the topic.  I knew about soy milk, but until recently I didn’t even know soy came from beans. In the last 3 weeks we have tried a large variety of milk and I wanted to share with you the scoop from my family’s perspective. Almond Milk:  The first switch from cow’s milk to an alternative was almond milk. I tried to sneak it in to the boys cereal on a…

Avoiding Poor Eating Habits-Insanity Day 17

Only 17 days!! It feels like 100.  As my body is getting more in shape my brain is getting more mentally exhausted.  I managed to finish my workout before 8am today which was great considering to day was Pure Cardio and Cardio Abs. This abs routine is brutal after finishing an intense cardio workout. The sweat seemed more profuse than usual. I like to think it’s because I’m pushing harder, but I’m worried I’m just more tired than I was in the beginning. Either way I can tell I’m getting in better shape and I’m happy. I was really encouraged…

Fast Food: Vegan Day 22

Generally, as a personal rule, I stay home and do absolutely nothing the day after a return home from vacation. I even work hard the day we get home to get everything put away and laundry done, so I can take one good day of recovery from vacation. What can I say? We vacation hard. 😉 Yesterday was vacation recovery day, or so I thought. At about 2:30 I received a call from a friend. Her husband was doing photo shoot for an online catalog and they didn’t have enough of the right age girl’s show up. He need her…

Insanity- Day 16

This is quickly becoming my least favorite calendar. Life is exhausting. I went to be late, the baby woke up twice to be nursed and I had bad dreams waking me up in between.  I don’t even remember my alarm going off this morning. The off button must have been more appealing than the snooze because I woke up on my own at 7am. Even though 7am is late to wake up in this house most days, my mind and body were screaming at me to stay in bed. Only my oldest was awake and he would have crawled into…

Vegan Vacation- Day 21

There are factors which often discourage people trying to maintain any sort of healthy eating or change in diet. The 2 biggest for me personally are parties and vacations. I grew up in a family where if there was any sort of diet, the start date worked around any sort of vacation or party as to not ruin the event with having to make different food choices. We love food in my family. My family returned home yesterday from a 3 night vacation with 4 other families. This was a 4 day party disguised as a vacation. There was “party…

Insanity- Day 15

Today is our first day home from vacation and yesterday was a day off.  Getting out of bed this morning to workout took every bit of discipline in my entire body.  Even then, I rolled out of bed at 7:30, one little boy on my heels and one left in my bed.  The girls were thankfully still sleeping. Today was a Fit Test day!!! I was actually really excited to see if I had any improvement. Also, even though the fit test is tough, it’s short, so I was happy to not have a late morning even though I decided…

An Insanity T-shirt- Day 13

An Insanity T-shirt- Day 13 Almost two weeks into this workout routine now, I’ve been really thinking about how much I will deserve the Insanity T-shirt when I’ve finished my 60 days. To receive one all someone has to do is send in a before and after picture. Hmmm. Let’s think about this. First I should mention I forgot to take a ‘before’ picture. My husband and I were so excited to receive our DVD’s in the mail when we did; we started the very next day. I did however have my 4 year old son take a before picture…

Tacos de Papas- Day 20

Tacos de…, taquitos, rolled tacos, whatever you choose to call them, they are one of my favorite foods. I grew up knowing them as taquitos, but since as many California natives do, I most commonly refer to them as rolled tacos. If you aren’t from my part of the country and are wondering exactly what this is, they are basically corn tortillas filled with chicken, beef or potatoes deep fried and served with guacamole. My favorite are served with cheese too, but often times they are topped with lettuce (I don’t like places who serve them this way) or cabbage.…

My Husband’s Salsa- Day 19

Salsa has always been big in my family. When making salsa myself, I’ve never ventured far into the possibilities until recently. Generally I like Salsa Fresca or Pico de Gallo in some circles, basically the fresh, chunky kind. I generally chop up tomatoes, onion, cilantro and a chili of my choice and add a little lime and salt, to which I have received many compliments over the years. My husband has brought me out of my shell a little in this department. Who knew there was any of me even left in the shell?  I’m generally pretty outgoing!  He started…

Insanity- Day 12

Today’s workout blessing was our lovely new venue.  We are vacationing with 4 other families in a huge cabin with a game room. My workout was completed in a very large space with my closest neighbor a pool table. The 42inch flat screen TV energized my husband and I and as a result we both pushed hard. I suppose another factor was our late start time. We had already woken up, fed the kids and I honestly thought my chances for a workout were over, but another sympathetic mommy watched the kiddos for us, while we went upstairs. My gratefulness…
