Abuela Comes to Visit- Day 18

A few days ago I shared about the food we ate on a visit to my dad and step-mom’s. This week my step-mom, sister and brother came to visit and Abuela agreed to teach me how to make her salsa, guacamole and tacos de papas. A favorite memory from childhood is the Mexican food at my grandma’s house when I went to visit my dad’s mom. She was a wonderful cook.  There is a part of me still sad she passed away without passing on her cooking legacy to me personally.Having my step mom show me some tricks of the…

A Day at Abuela’s- Day 17

Last week we spent the day at Abuela’s. Abuela means grandma in Spanish hence the affectionate name the kids call my step-mom. So what used to be referred to as a day at my dad’s has quickly turned into a day at Abuela’s. I was nervous about what we were going to eat there, not so much for the children and myself, but for my husband who often finds himself hungry.  I’m more liberal with what I let the kids eat when we are at other people’s houses and I knew I could happily live off beans and tortillas for…

Insanity- Day 11

Today was a Cardio Recovery day. I managed to finish my workout before 7am today!!! Managing to get up a few minutes after six was of no consequence when the boys were up and at em’ just as early today.  We have a little family vacation starting today so I guess we are all a little more excited than usual to get going. The short 33 minute DVD had me sweating even though we never moved very quickly.  Deep stretching and balance work made my body really have to work to stay with the group. I’m always amazed at how…

Vegan Kids- Day 16

I’m not convinced even a healthy vegan diet is as good for a person as some say. I’m especially not convinced to a point where I’m strict with my kids about what they eat.  I’ve watched them eat pizza, bean and cheese burritos, yogurt, ice cream and a fair amount of white sugar and flour.  They have devoured any meat or dairy product in their sight over the last couple weeks.  Yesterday, after my oldest begged for more grilled chicken at a fast food place, I wondered if their body really does need more protein, iron and calcium then they…

Insanity- Day 10

Wahoo, I’m into the double digits!! Fell asleep early last night!!! My body feels tired come evening. My husband and I fell asleep on the couch at around 9:30!!! This is SO early for us. When we finally woke up and went upstairs to bed it felt like 1am, but it was only 11. This felt like a small victory in my efforts to get up in the morning. This morning I was out of bed by 6:20, but due to life our workout didn’t start until a few minutes before 7am. Hopefully I’m slowly going backward and will in…

Insanity- Day 9

As I was just about to push play on my workout at a few minutes before 7 (I know, I know) this morning, the baby started fussing. I attribute much of this to the fact I should have been finished with my workout by 7, but, what could I do. So the oldest, who woke up before me, and  I went back upstairs and I fed precious little Shiloh and put her back down for a little more sleep. She was so cute cooing and smiling at me.  I sat there just staring at her for several minutes. As much…

Tortillas- Day 15

Who knew there was so much junk in corn tortillas? Perhaps all you label readers out there, knew, but I didn’t realize they added extra ingredients like cellulose and fumaric acid. I don’t even know what those are, but I was shocked to see them in my tortillas. Fumaric isn’t even a word according to spell check!! Well, am I half Mexican or am I half Mexican?  Surely making tortillas can’t be that difficult. And…finally…something was as easy as I anticipated!!! I happened to have some Maseca from making Tamales at Christmas and the instructions for making tortillas were right…

Juice Pulp Muffins- Day 14

Juice pulp has always been fascinating to me.  Since we started composting last year, I found myself quite pleased to throw my leftovers from juicing in for the worms. This time however, I wasn’t content to throw the pulp away. Surely it can be used for something. Thankfully Google often thinks for me and as I began to type juice pulp the word muffins popped up.  Well hello juice pulp muffins. It is sincerely nice to meet you. Let’s see if this will be a long time friendship. I, of course, wanted to eat my muffins, immediately so I had…

Insanity Day 8

Top 5 Worst parts of my Insanity- Day 8 I didn’t start until 6:45 Before I even brushed my teeth the boys were up. During the 18-15 minutes left mark I time warped into some alternate universe and an entire hour passed. At one point I wanted to quit so badly I started hoping I would hear the baby cry on the monitor. At one point I wanted to sit down and cry myself. Perhaps the victory is more enjoyable when the obstacles seem more intense. I finished the workout strong. There seemed to be more sweat this round of…

A Vegan Friend- Day 13

About day 2 of this vegan thing, I ran into a friend at church who had been cooking vegan for several months. We spoke enthusiastically about how we both used to think vegans were crazy but now we are eating vegan. It was a conversation in a parking lot standing between 2 minivans full of children. Much to my surprise and excitement, I received a text later the same afternoon asking if she could bring me dinner. This is an offer I NEVER turn down these days. So she brought her 3 boys and the 2 of us with our 7…
