Hi! I’m Nickole (note the spelling. my mother did that.) I’m a domestically challenged wiper of bottoms and noses! I’m a coffee drinking, bacon eating mama who loves Jesus and has been pregnant or nursing (sometimes both) for the last 9 years!

A Good Mom Moment

The times I genuinely feel like a good mom are few and far between. As a Christian the standard is high and I often fall short of what is required of me.  My kids and I read stories together and we memorize scripture, but I’m so far from where I know I should be in my speech and my attitude it genuinely hurts my heart sometimes. Today I had a “good mom” moment. My sister and her boyfriend came over and spent the day with us. We had already picnicked outside, played in the kiddies pool, picked oranges and watched…

French Toast- Day 12

French toast and I have never really been friends. Once, when I was a little girl, my uncle’s girlfriend made me finish a plate of French toast with only peanut butter and milk. As a child I didn’t like eggs or milk and it was possibly, to date, my most traumatizing food experience. Since I’m still not a big fan of eggs, I’ve never really loved French toast, however since having children; I do make it on a semi-regular basis.  My husband makes really good French toast actually, and is a bit particular about how it’s best. I learned 2…

Insanity-Day 6

Plyometric Cardio This is the second time for this workout. I was much improved from the last time we did the video. Even my husband noticed. Although it was another tough day getting out of bed, I feel very determined. This is by far the most difficult video out of the ones done so far. I don’t come close to doing the number of reps the instructors are doing, but I try to go at my own pace , always sweating, keeping energy high and ,careful to maintain good form. I try to only break for the allotted water…

Insanity Day 5

I’ve heard it said the battle for the next day is often lost the night before. As a result I have been putting forth a diligent effort to go to bed early enough so I can easily get up early in the morning. I’m not regularly a morning person so this is a struggle for me. My head hit the pillow at about 10:30 last night. So far, so good.  Then I just couldn’t seem to get to sleep.  I usually read, but found myself watching a show on Netflix in bed on my phone. Fell asleep close to 11.…

Curry- Day 11

Curry is a spice I’ve always wanted to use. From most of my research it seemed curry was a spice you served with vegetables and rice.  Well, stir fry I can do.  There is both curry paste and curry powder. Prior to knowing curry paste existed I purchased the powder. I would like to try the paste.  My husband who lived in Sri Lanka for a couple years  wasn’t impressed by the mild curry flavor. I’m going to attribute most of his objection to the fact I used curry powder, I don’t think I used enough and I don’t know…

Chili “Chicken”- Day 10

Don’t panic people, I didn’t eat meat. On my mom’s side of the family there is a recipe and we all make our own little version.  We call it Chili Chicken. I’m not sure why, but it’s the only name I can use comfortably. I am the first to tackle the vegan edition. I was skeptical of subbing out tofu in a family favorite, but eating foods so new and different has made me really want familiar tastes. So…I made our old family favorite with tofu!!! I should take this moment to let you know, until ten days ago I…
